Tobiko caviar differs from masago in size and color. It is slightly larger, more transparent, but these varieties of caviar do not differ much in taste, except that the tobiko is not bitter! Tobiko caviar is an indispensable ingredient in such rolls as California and a component of spicy sauce and gunkan maki.
